The must was stored in cold tanks, delaying fermentation (maceration) for 7 days. The colouring was released very well in 2015, similar to 2014. It helped. The must was pumped over three times a day with the old manual pumping over of the cap to extract the colouring material as much as possible. The alcoholic fermentation lasted 7 days, being controlled between 27 and 29 degrees, gradually increasing it. Extraction of seeds up to 27% in delestages. Only free-run must . A natural malolactic fermentation. Clarification with albumin. Decanted in the harsh winter (cold winter on the banks of the river). Not filtered . Can be decanted.

Colour

Intense, with a lot of colouring. High, well-defined layer. Picota red with violet details in the meniscus, for the ageing it has undergone. Glyceric, clean, bright and impressively lively for the time in the barrel. 

Nose

 Powerful, but at the same time feminine, soft, also, with fruity, crisp, very intense and fresh aromas of blackberry and currants, plums, all in compote, very balanced with the American oak

(vanilla and sweet aromas). Good combination with alcohol. 

Mouth

Attack, although dry, very fruity and powerful, but with soft, vanilla tannins, with fresh and fruity tannins. Evolution without highlights. Frank in the mouth. Eternal in the end of the mouth. It is at its best in the bottle.

Ribera Del Duero
