Archangelus Gabrihel - Spanish Oak
Colour
Intense, with a lot of colouring. Well-defined high layer. Picota red with violet details in the meniscus, a little more intense than the American and less than the French, for the ageing it has undergone. Glyceric, clean, bright and with impressive vivacity for the time in the barrel.
Nose
Powerful, somewhat purer, frank, with a certain softness, also, in fruity aromas, clear, very intense and fresh, of blackberry and currants, plums, all in compote, very balanced with the Spanish oak (coconut, cinnamon, white spice, cocoa, balsamic), complex and clean of undergrowth and humidity from other oaks. Good combination with alcohol.
Mouth
Attack, although dry, very fruity and powerful, but with soft, balsamic tannins, fresh and fruity tannins with the sensations of the barrel, cinnamon, coconut, cocoa, liquor and a certain balm. Evolution without highlights. Frank in the mouth. Eternal finish. It is at its best in the bottle.
The must was stored in cold tanks, delaying fermentation (maceration) for 7 days. The colouring was released very well in 2015, similar to 2014. It helped. The must was pumped over three times a day with the old manual pumping over of the cap to extract the colouring material as much as possible. The alcoholic fermentation lasted 7 days, being controlled between 27 and 29 degrees, gradually increasing it. Extraction of seeds up to 27% in delestages. Only free-run must . A natural malolactic fermentation. Clarification with albumin. Decanted in the harsh winter (cold winter on the banks of the river). Not filtered . Can be decanted.
Bottled : early March 2017 (March 1-2) (after having spent 13 months in Spanish barrels (100%), fine grain, medium toast and of extreme quality. In the bottle where it rests until the day of its labeling and subsequent consumption.
