Mouth
The palate is fresh and tasty with subtle roasted notes in harmony with light fruity touches and fine spicy nuances along with a pleasant minerality that gives it freshness, elegance and a persistent finish.
Vineyard: Selection of Pinot Noir grapes from the Monte plot with an area of 0.6 hectares and located west of the main hill of Torremilanos (next to the Roble Viejo plot) with gravel soil on the surface with sand and clay in deep.
Preparation: The shelled grapes are placed in a concrete tank for alcoholic fermentation with yeasts specific to the grapes and the harvest. Maceration for 5 to 6 days before the start of fermentation. Subsequently, contact with the skin is maintained for another 5 days before moving into French and American oak barrels to finish both fermentations (alcoholic and malolactic). Throughout the entire process, the maceration is subtle and light. Once the fermentations are finished, the wine is not racked until the arrival of winter, when it is moved to the aging area. Total aging of 15 months in 225 liter barrels from our own cooperage in the winery.
